Mexican Rolls

Mexican food is one of those cuisines that many people eat occasionally and think about rarely, which is unfortunate because it is such an exciting style of cuisine. Authentic traditional Mexican cuisine offers something for everyone. This festive cuisine offers traditional dishes as well as new modern classics. Mexican cuisines are Known for intense flavors, colorful presentation, unique spicing, and seasoning. In this dish, Tomatoes and chilies, along with garlic and onion are used. Here is three basic parts for this recipe.


♥ Garlic-Cheese Rice
♥ Refried Beans
♥ Mexican Tortilla


Preparation Time: 30 mins
Cooking Time: 30 mins
Makes 4-5 wraps


Ingredients
✏ Garlic-Cheese Rice :


• 3 tsp chilli-garlic chutney
                  (1 tbsp finely chopped coriander
                   1 tsp finely chopped green chillies
                   2 tbsp finely chopped fresh green 
                   garlic (hara lehsun)
                   1 tsp lemon juice
                   1 tbsp powdered sugar
                   2 tsp vinegar
                   salt to taste )
       Mix all ingredients in a bowl and grind them properly to make a thick paste.
• 2 small size finely chopped onions
• 1/2 capsicum ( cut into stripes)
• 2 tsp dry red chilli flakes (paprika)
• 4 tbsp grated processed cheese
• salt to taste
• 1 cup cooked rice


✏ Refried Beans :


• 1 1/2 tsp oil
• 3 tsp finely chopped garlic (lehsun)
• 2 small finely chopped onions
• 2 finely chopped tomatoes
• 1/2 finely chopped capsicum
• 1 cup soaked , cooked and drained rajma (kidney beans)
• 1 tsp chilli powder
• 1 tsp roasted cumin seeds (jeera) powder
• salt to taste


✏ Mexican Tortilla :


• 2 cups corn flour
• 1/4 cup butter
• 1/2 tsp salt
• 1/2 tsp Baking Powder
• Warm water


✏ For Garnishing :
• 4 tbsp finely chopped spring onions whites
• 4 tbsp sour cream ( I have used Mayonnaise instead of sour cream)


Method


✏ Garlic-Cheese Rice :
• Heat the oil in a pan, Add onion and capsicum strips , saute on medium flame for 2-3 minutes or till onion turn translucent.
• Add chilli-garlic chutney, chilli flakes, cheese and salt and cook on a medium flame for a few seconds, while stirring continuously.
• Add cooked rice, mix well and keep aside.


✏ Refried Beans :
• Heat oil in a pan, add onion and garlic , saute on medium frame till onion turn translucent.
• Add tomatoes ,heat on medium flame till oil comes out on the surface.
• Add capsicum,,rajma , chilli powder, cumin seeds powder and salt, mix well and cook for 5 minutes or till the mixture is dry and keep aside.


✏ Mexican Tortilla :
• Mix well all dry ingredients into large bowl.
• Add butter and mix it well.
• Make a soft dough using warm water.Knead for 5 minutes.
• Make round shape tortilla and cook them on a non stick pan on each side for about 1 minute.






❏ Place a tortilla on a clean dry surface.
❏ Spread sour cream evenly, place rice in the centre of the tortilla.
❏ Arrange refried beans and spread chilly-garlic chutney over it.
❏ Arrange spring onion whites and sour cream over it and roll it up tightly.
❏ Put the roll in serving dish and spread cheese and onion whites over it and serve it immediately .
